Tia Maria Coffee and Walnut Cake



Now that Autumn has fully introduced itself this year I have found myself wanting to bake more and more and more!

If you saw my previous Disaronno Brownie Recipe, you will know that I love baking and incorporating alcohol into my recipes haha! I found this divine recipe from the BBC Good Food website which is always my go-to for different recipes and inspiration! Now, I know that I am not the prettiest baker but its the taste that counts right?!?! And this tastes DARN GOOD!

You will need for the cake mix:
  • 200g Caster Sugar
  • 200g Softened Butter
  • 4 Eggs, Beaten
  • 200g Self-Raising Flour
  • 1tsp Baking Powder
  • 15 Walnut Halves
  • 2 heaped tbsp instant coffee, dissolved into 1 tbsp of boiling water

For the filling you will need:
  • 500g pot Mascarpone
  • 85g light muscovado sugar
  •  4 tbsp Tia Maria (Baileys works amazingly as well!!)








 

 Lets Bake!!!!

Step 1: Heat oven to 190C/fan 170C/gas 5. grease two 20cm sandwich tins with butter and line with non-stick baking paper. Toast the walnut halves in the oven for 10 minutes. Put aside 10 and chop the rest into small pieces.

Step 2: In a large bowl, beat 200g caster sugar, 200g softened butter, 4 eggs, 200g self-raising flour and 1 tsp baking powder. Dissolve the instant coffee in boiling water and add this to the cake mixture. Beat together until you have a smooth, soft batter

Step 3: Divide the mixture between your tins and smooth with a spatula or spoon.

Step 4: Bake for around 20 minutes, until golden brown. Once fully baked, place onto a cooling rake to completely cool.

Step 5: Once the sponge is cooled it's now time to do the filling! Beat the mascarpone with the light muscovado sugar and Tia Maria until smooth

Step 6: Sandwich the two sponges with a third of the filling and some chopped walnuts.

Step 7: Cover the outside of the cake with the remainder of the filling and sprinkle with some chopped walnuts (some coffee beans would look lovely too!!)
