Cherry Disaronno Brownies!

In order to celebrate the new series of The Great British Bake Off returning to our screens I thought that I would share this amazing Cherry Disaronno Brownie recipe I found earlier this year from Sainsbury’s!

Baking is something that I LOVE and I hope to make this a regular occurrence on here!

You will need:
  • 425g tin of black cherries in syrup
  • 300ml Disaronno/Amaretto
  • 250g unsalted butter
  • 250g dark chocolate
  • 4 large eggs
  • 275g caster sugar
  • 150g plain flour
  • 50g ground almonds
  • 100g milk chocolate
  • 3 tbsp flaked almonds
LETS BAKE!

Step one: The day before, tip the cherries into a bowl, pour over the Disaronno and leave to marinate for 24 hours (I left mine for about 12 hours and you can still taste the Disaronno)

Step two: The next day, preheat the oven to 200°C, fan 180°C, gas 6. Grease and line a 31 x 21cm tin with baking paper. Strain the cherries. Melt the butter and dark chocolate in a heatproof bowl over a pan of simmering water, stirring occasionally until melted.

Step three: In a large bowl, whisk the eggs and sugar until pale, then stir into the melted chocolate until smooth. Stir in the flour, ground almonds and a large pinch of salt. Fold in the marinated cherries and pieces of milk chocolate.

Step four: Scrape into the tin, scatter with almonds and bake for 25 minutes until just set. Cool, then cut into squares.

These brownies are the perfect combination of gooey but not sickly!! The Cherries give a slight hint of Disaronno but don’t worry this can be left out!

Please let me know if you try this recipe and also let me know of any other recipes which would be good to try :)
